Playing Katchup!

I realize that I have not posted anything in a couple days, but honestly nothing has really happened in the past few days and the quiche recipe I had to share is sitting on a table at my friend's house. :(

On Sunday, I went over to Stephanie's house for dinner and we ended up making the most delicious quiche. It was a cheddar and broccoli quiche. This was my very first quiche, and I think I shall be enjoying them more often (once I get the recipe again).

We also decided to make the Mozzarella Sticks. Let's just say that you really have to follow the directions on this one. We thought we could just bake the cheese sticks rather than frying them, but that proved to be a very big mistake.
  1. It was hard to tell if they were done. The outside did not change colors in the oven and we only knew they were done when the cheese exploded out of the casing.
  2. It was very floury. ICK! The pasta sauce helped mask the taste, but the flour after taste was not working for me.
I am going to try this recipe again and see if I can get a different outcome.

The Vegetarian That Came to Dinner

Last evening, my family went to my Grandma's house for dinner. One thing I have learned about my family is, that just because you are not eating certain things, does not mean that they are not going to eat them. That being said, my Grandma made pork. Luckily for me, she also made some "fish" so I would not have to bring my own fish. While I defiantly appreciate the fact that there was another option for food, it is hard to be satisfied with just appetizers. She made me clam dip (I’ll put the recipe up soon) and shrimp cakes. I really tired to eat a ton of the green beans and apple sauce, but I just felt unsatisfied with dinner.

I think it is hard to be a vegetarian when no one around you is one. I mean think about it, no one else has a reason to make another dish and let’s be honest with one another, and it’s usually just “you” who isn’t eating meat. I kind of feel like I need to be eating before I go out to functions where fish isn’t on the menu. Eating appetizers just is not that satisfying and it’s not that filling.

Tuna-paloza!

I decided to take the day off of work today, so I ended up driving over to my parents' house to do some laundry and see my little man, Moe the cat. I love that cat, and I wish I could have taken him with me when I moved, but he is an old cat and basically set in his ways. He does like "hanging" out with me when I come visit. I got to my parent's house around lunch time and I decided that I was going to make a tuna sandwich. Not only do I like tuna, but Moe likes tuna too. So while I was making the tuna sandwich, Moe was begging for tuna.
See what a begger!

How could I say no to him.
Here is my tuna sandwich. It was delicious and nutritious.

Day Two

Today was a lot easier than yesterday... until a bunch of people at work got hamburgers for lunch. I was completely craving a burger for about 30 minutes (until the delicious meaty smell died down). I did get my protein intake in today. I had a Tiger Milk bar, which was delicious! I had the peanut butter one; I figured it would have more protein in it than the chocolate one.  I also was able to get Mexican food at the Tee Pee in Phoenix. It was freaking delicious!

I spent the rest of tonight looking up recipes and I think I found something awesome! I'll let you know how it is and the recipe when I make it.

Is It Over Yet????

Okay... so day one officially stunk! Why is it that when you give something up you crave it like nobody's business? I feel like the girl version of the Hulk right now. "Journey Mad, Journey Smash"

All kidding aside I did have an extremely hard time adjusting to the lack of meat/protein. I think I need to find a suitable substitute for the protein I was getting in meat. I think that should help with the abnormal cravings I have been having today. Maybe a protein bar or adding whey powder to food will help. I will not eat tofu! Yuck! I also need to start looking online for vegetarian recipes so I am not just eating lettuce and other random vegetables. When I start cooking vegetarian meals I will take a picture and add the recipe in my blog. I just had cheese raviolis tonight and they were delicious I almost used the meat sauce, but I used the meatless sauce. Oh there was also a salad… This will be easier... right???

Last Meal

Tomorrow is Ash Wednesday and is the start of Lent. I decided that this year for Lent to give up meat (well kind of) I am going to be a pescetarian (I will still eat fish and eggs). I have spent the past couple days cleaning out my refrigerator of meat (pretty sure I am all meat-ed out from the past few days). I now have a fully stocked refrigerator with veggies and fruits.

For my last meat I made chicken parmesan. It was delicious and healthy. Too bad I won't be able to eat it for the next 45 days. Thank goodness I have family that is willing to take all my meaty leftovers.
