Tomorrow is Ash Wednesday and is the start of Lent. I decided that this year for Lent to give up meat (well kind of) I am going to be a pescetarian (I will still eat fish and eggs). I have spent the past couple days cleaning out my refrigerator of meat (pretty sure I am all meat-ed out from the past few days). I now have a fully stocked refrigerator with veggies and fruits.
For my last meat I made chicken parmesan. It was delicious and healthy. Too bad I won't be able to eat it for the next 45 days. Thank goodness I have family that is willing to take all my meaty leftovers.
Welcome to the pescetarian world! Once you get the hang of it, it's easier than you think. There's a whole list of things I can't/won't eat, and I do just fine. You'll learn to love vegetables!!!
